Let's Share Cookie Recipes

I'm trying all new recipes this year. Here's what I made so far:

Cranberry Pistachio Cookies: My Rating: *****

I cut the cranberries in half. Watch closely to make sure they don't get too dark on the bottom.

Date Filled Cookies: My Rating: *****

My Grandma used to make date cookies, but I always remember them being made with lard (blech!) and being way too big and thick.

Date Cookies
2 1/4c butter or margarine, softened
2 1/4c packed brown sugar
1 1/2c sour cream
1 1/2 tsp. vanilla
7 1/2 cups flour
6 tsp. baking soda
1 1/2 tsp.salt

Cream butter, add sugars & sour cream & vanilla. Add flour, soda,
salt. Roll small portions 1/8 thick. Cut with 2.5-3" round cutter. Place on
ungreased cookie sheet, fill, fold in half, and fork or pinch sides
together. Bake in 350 oven for 10-12 min.

Date Filling
2 1/2 C dates, cut up (2 boxes)
1/2 C sugar
1 1/2 C water

Combine all ingredients in a med. saucepan. Cook till thickened. Chill
before filling.
