what I did and what I have to do!

Post by chelle on Wed Jul 07, 2010 12:31 am

okay, I had an order for a plain white sheet cake- with a tartan thrown over- yes a real scottish tartan.

I couldnt do it. I tried to hand paint it, it wouldnt work- I tried to get an edible image- it turned out like shit. I worked on it for days- literly 10 hours days- a few of them. it was due on friday. I was up till 3am- BR was trying to help me- I gave up. The next morning he told me to go buy an airbrush- he stayed home till noon trying to airbrush it. He had to go to work. I worked on it the rest of the night and asked if I could meet her with the cake before she went to her family reunion.

She said I could meet her on saturday- so this is what I gave her.

I had to spend 95.00 on the airbrush- only got 70 for the cake. That is oak leafs, pine needles, and crowberries - they were the badges that the clan wore in addition to the tartans. and I also found the crest and put it on there.

Then yesterday, I got a call- will I do a wedding cake- I am scared to death of wedding cakes- PERIOD.

This is the cake I have to do. JUST like this-

Chelle, you CAN do that cake! The beach cake you did was far more complex. And think how much money there is in wedding cakes! Once you do one or two they won't be so scary. And that one is mostly just a zebra pattern and not all detailed.

The hardest thing on that wedding cake would be the flowers..as far as the tiers go, Chelle you are the fondant queen and can definitely do it. I would think the tiers would come together relatively easy. I would reserve most of the time to make the flowers..you should make some good $$ off that cake. Man I would have kept making cakes here if there was any business for it. But those who would want my cakes are too cheap to pay what I would need to get out of them...they want Ace of Cakes with Walmart prices..so....

THank y'all for the vote of confidence!!

The empty space is whats killing me!! I will admit I'm scared to deathof it.

And trade secret- you can buy the sugar flowers already made, for a few bucks each- and folks charge like 6-8.00 each for them!!

I think I will try to make them though- seems kinda crappy to do it the other way. LOL

I think the zebra will be pretty easy- I just really am scared of the stupid empty space!!

I wonder why they want that awkward space with the columns. I think it would look better with either no space or a more uniform space between layers. Who want white plastic columns to be a focal point of their cake (says someone who had white plastic columns on her own wedding cake)?

I got it!! I sent her the price email this morning. and I just KNEW she would balk..

Michelle Byerly July 8 at 11:09am
Sorry it took me so long to get back to you. I've been looking for a teir separator that I trusted enough to hold up the 3 cakes that would be on top of it. I've decided to go with 2 differnt systems that will give stability to the top tiers and not crush the bottom teirs with the weight.

Do you want wedding servings? or Party Servings. I price per serving based on party servings. They are slightly larger, (1 1/2X 2in vs a 1X2 inch wedding serving plus the height of the cake).
I am looking at it being a 14 inch on bottom, that feeds 63 people
12 inch above that feeds 48 people
the 3rd teir would be a 10 inch serving 30, and an 8 inch serving 20.

This gives you a total of 161 people fed. I will include a 6 inch square on top at no charge, this will be your anniversary cake.
All tiers will be double layered, with buttercream filling, and fondant covered.

I am not going to charge you an equipment charge or deposit.

I am looking at there being about 12 flowers on the cake- these will be 5.00 each. They will be handmade sugar flowers, and will be handpainted.

The price breakdown will be:

161 fondant guest servings: 442.75
6 inch top for anniversary: No charge
Equipment rental/special order: No charge
Sugar Flowers (12) @5.00ea: 60.00
Delivery/setup in Jasper Area: No charge

-----------------------------------------------------
Total: 502.75

If you want to go with larger teirs to feed more people, let me know. If you decide to cut wedding slices out of this cake, you will get almost half again as many servings. I just dont like using the wedding serving guide as my price guide because they are so small. With this you get more cake for less charge. Please keep that in mind when getting other bids.

I understand that your mom is in the hospital, so you can get back to me in a week or so if you need to. I hope she recovers soon.

Chelle Keri Conner July 8 at 12:29pm
Okay everything sounds great!!!!!!!
I'm not getting other bids, I WANT YOU! lol :-)

I was wondering though if I could start paying you like 50.00 every two weeks starting in a few weeks so that I could have you paid in full before the wedding? I'm just trying to budget the wedding.

If you would rather have it all at once thats understandable.

I definitley want you to do this for me though. I'm SOOOOO EXCITED!

Does it have to be the sugar flowers or can it be real flowers? I'm going Tuesday to talk to Mrs. Rhonda at always remembered about flowers!

Also can you get me a price on a grooms cake? Or do you want to wait until a little later to do that. I wanted the grooms cake to be shaped like the superman emblem. He loves superman! Just let me know, and THANK YOU SOOOOO MUCH!

Keri

Michelle Byerly July 8 at 1:05pm
OH WOW!!! Thank you!!!! I am SOOOO excited about it!! its gonna be great! Smile

The payment plan sound great. I dont have a problem with that at all Smile When you get the first payment we will meet and I'll give you the contract Smile

We can definatly do real flowers. All I ask is that I am given the real flowers and put them on myself. That way, there is never a question about someone else having touched the cake and possibly knocking it over, or leaving holes or marks in places that will be seen Smile So if you order them, I can get with the florist and get them or can get them the day of the wedding at the reception hall to put them on Smile

as far as the grooms cake. It will be no problem. do you have a specific size?

what I am thinking with that emblem is:
take a square cake, maybe a 16 inch- (we can go bigger/smaller if you want) and then putting the blue down. And raising the S in red up another layer. making it 2 dimensional. The S will be higher than the yellow, it will be carved down a little ways. that way the S really pops out at you.

a 16 inch cake, done like that would normally be around 220.00. But since I am doing your wedding cake, I will do it for 75.00.

Do you want chocolate for the grooms cake? or strawberry? if you want it to be white wedding cake also, I can tint the batter to be the same colors as the parts of the emblem. It wont be as bright, but it would still be fun.

If you are happy with the prices and sizes, we will agree on 515.00 for both cakes.

Thanks again!! and let me know if you have any questions or concerns. I'll be more than happy to work with you in any way I can!

Chelle

Lori I agree about the empty space- It just seems.. empty..

and I got out of making the sugar flowers. I fiqured to get 12 on the cake, I'd have to make 20 or more, cause they are SOOOO delicate!

I love that you mentioned that she may be comparing apples to oranges if she doesn't take into consideration the serving sizes.

Congratulations, Chelle!

I had bookmarked a page at Allrecipes.com that shows how to assemble a wedding cake, so I was wondering - are you going to use a simple syrup to brush your layers with? People say it keeps the cake layers very moist.

Oh Chelle! That's just wonderful! And you will have no problem making that cake at all. Real flowers will look wonderful, AND they mean less work and worry for you.

I don't like the empty space, but I don't hate it either. You have to imagine it at the wedding itself. In the photos, she and the groom will be beside it and the focus will be on their faces and her dress, not just the cake. Some of the empty space will be where you can see them standing beside/behind it. So it may not seem as blank.

THanks COnnie Smile and I hate writing the back and forth letters- I did the secretary thing for so long, I KNOW it should be all legal- but I'm just not her anymore- I try to be less ... hardnosed, and have more fun. Smile

and yes, unless it crashes, you will get pics ;-)
