Fresh Fruit Pizza with Citrus Glaze
Fresh Fruit Pizza with Citrus Glaze
For the cookie base:
Use 2-3 packages of refrigerated sugar cookie dough. My big 16 inch pan needs 3.
First, line your pizza pan with parchement paper, then spread the cookie dough evenly over the pan, spreading to within about a half inch or inch of the edge. Bake at 350 until slightly browned - it firms up a little after baking. It will take longer than the stated time on the cookie dough. I had mine in an extra 10 minutes.
Cream Cheese "sauce"
8 ounces cream cheese, softened
3/4 teaspoon vanilla extract
6 tablespoons granulated sugar
Fresh Fruit Topping:
Any combination of sliced Bananas, Strawberries, Kiwi, Blackberries, Raspberries, or Blueberries. Start at the outer edge of the pizza and work your way to the center. You can overlap slightly, if you want to.
Citrus Glaze:
6 T. water
1/2 cup fresh orange juice
4.5 tsp. Cornstarch
1/2 C. Sugar
3 T. lemon juice
Combine all ingredients in a small saucepan. Cook over medium heat until it starts to thicken. Remove from the heat and cool slightly. Using a pastry brush, gently brush the fruit with the glaze.
